I'm a big fan of Cool Edit pro (or Adobe Audition as its now called) you can use the built in tools to remove any background noise & hiss by getting profiles from the noise at the start of recordings (seems better than these other progs which just guess at the background noise), theres also a built in click pop removal tool which works very well but theres also an external plugin for it which is even better
