As for cheese - for me its how a crowd reacts to the record, its when the vibe in the club lifts and the huge grins appear.. personally its not a word used to grade the quality of the track.
I would say a good example of cheese would be Bizzare Inc- Playing With Knives.

I'm with ya on that one. I define tracks as cheese on 2 levels. The cheese that gets everybody going due to its popularity (although I think the correct term is just "Pop"). And the types of tracks that are very similar in production style to each other such as Italian Synth or the UK style of tracks such as Clock, Pianoman, etc.
But I think one thing people get mixed up with the term cheese is that it means the track is sh!te: To which I disagree. For me, it just means its a popular track or has that certain "cheap/basic" sound to it.
