Adobe Audition is a great bit of software.

Last time I downloaded that it wouldn't let me save to mp3.. Just a aup file or summat like that and wav.

Think I ended up goin to wav n havin to convert to mp3.

I used to like sound forge but lost my copy - anyone got a spare lol ;)

It is the flexibility of the saving which makes it great. I record and trim using the wave form each track ensuring all recordings start without any lead in and finish correctly. Hit a button and I can balance the recording, another button and clicks are removed (only used if a bad click as I like my recordings to sound like vinyl) and final button to amp to the level I want it at. Save the recording as a wav and then simple swap of format and record as mp3. Very very easy and great quality.

I use v1.5 which is about 6 years old and does the job brilliantly so don't see the point in upgrading.

Audacity = Doddle.

seconded & free & a piece of cake to remove snap, crackle & pops.
Easy to export as mp3 (think you might need to dl a plugin if memory serves me correctly).....
& what wins it for me though it might be also on loads of others is the option of applying to a chain to loads of different files at once, so that you don't need to do much of the opening/editing yourself.
